Creamy Red Wine Sausage Spaghetti

A nice filling pasta dish accompanied by a creamy sauce made with sausage and mushrooms that becomes an interesting bordeaux colour thanks to the addition of a touch of red wine.

Prep time: ~20 mins | Serve: 4

Ingredients:

  • 500g Spaghetti
  • 300ml Single Cream
  • 3 regular sized Sausages
  • half of a large onion
  • 100g of Baby Button Mushrooms
  • half a glass of Red Cooking Wine
  • A Chilli Pepper
  • Pinch of Rosemary
  • Pinch of Pepper

Preparation:

  1. Put the water for the pasta to boil
  2. Heat up some olive oil in a pan over medium heat
  3. Chop the onion finely
  4. Add the chilli and chop that too into thin round discs
  5. Put the onion and chilli in the pan
  6. While the onion goldens up, chop the mushrooms finely
  7. Add the mushrooms to the pan
  8. Take out the sausages cut them in the middle and remove the skin
  9. Chop em up to small bits and add em to the pan
  10. Add some rosemary if you like
  11. Once the sausages are cooked add half a glass of red wine and raise the flame to max
  12. Wait for the alcohool to evaporate, lower the flame and add the cream
  13. At this point the water should be boiling, put in the salt and then the spaghetti. In the name of Your Lord don’t break ‘em
  14. If you want you can add a pinch of pepper to the sauce
  15. Once the sauce is nice and creamy turn it off. It should be a nice creamy bordeaux/pink colour
  16. Drain the pasta andd add it to the sauce, stir and serve.
  17. Easy Peasy Mario & Luigi!

Tips:

  • Check the guide on how to cook pasta if unsure
  • Careful with the spices don’t wanna overload this rich dish
  • Remove the sauce from any source of heat after serving to preserve it better
  • Add parmesan to the dish for extra tasty heaviness
  • When you first add mushrooms they’ll suck up all the oil and you might wanna add some, if you do, careful to not add too much as the shrooms will spit all their water out in a few mins anyway

Recommendations:

  • I usually go for Barilla, DeCecco or Voiello Pasta
  • Just use a cheap leftover wine to cook
  • The sausages should be as plain as possible

Possible Substitutions:

  • Soy cream works really well too
  • Any mushroom will do really
