My dad taught me this one and he’s probably not happy that I’m telling you this as I make this without the right ingredients being here and all. Still I enjoy it and so do my friends that are kind enough to lie to my face. Those who don’t ain’t my friends no more… I have a fragile ego, bite me…
Prep time: Hours! | Serves: ~10 (Don’t worry you’ll give some to family or freeze it)
Ingredients:
- 1kg Golden Onions
- 2 Carrots
- 1 Celery
- A Beef roast joint, roughly half a kilo thicc
- 1 Bay leaf
- Fresh Rosemary
- Fresh Parsley
- Olive Oil
- Salt
- Pepper
- A glass of White Wine
Preparation:
- Chop 1 onion, 1 carrot and celery to small bits
- Slice the remaining onions, I do semi circles
- Add some olive oil to a large pan and heat it up
- Add the soffritto (onion, carrots and celery) and cook til golden
- Add the meat and cook until nice and done on a side and flip it over
- Season with a bit of salt and pepper if you want
- Prepare a bouquet with half a peeled carrot, some celery, the bay leaf rosemary and parsley
- Add the rest of the onions and the bouquet, put a low flame and put the lid on
- Cook for about 3hrs stirring occasionally
- After 3hrs, remove the lid and add a bit of the wine
- You are gonna cook it now without the lid on for 1hr adding the wine slowly to keep the Genovese from drying up
- Remove the bouquet, take the meat out, cut about a fourth of it to eat and shred the rest then add it back to the pot and stir
- That’s it, easy peasy genovese!
Tips:
- There is no real need to season
- The closer you are to done the more careful you need to be with stirring, it might burn
- You can freeze it, it keeps very well
- You can use the blender to chop onion carrots and celery, if you have many you can blend a bunch, use some and freeze the rest for next time
Recommendations:
- I usually go for Sainsbury’s Roast Joint
- The sauce is quite sweet and that is why we add the wine, if it is too sweet you may add some more, but be careful not to put too much you alchy!
- Any hollow pasta will go well with this like penne or paccheri
Possible Substitutions:
- Any thicc slab of muscle meat from a cow will do really
