Lemon Popcorn Chicken

I was taught this recipe by an old lady that used to live in the village where I grew up so you can be sure it is good. It is ideal for a quick and not too heavy snack

Prep time: ~20mins firts time, 15mins when familiar | Serves: 4

Ingredients:

  • 4 Chicken Breats
  • Plain Flour
  • Salt
  • Pepper
  • Seasoning
  • Lemon (Juice)
  • Olive Oil

Preparation:

  1. Cover the chicken breast with a sheet of cling film and flatten with a meat mallet
  2. Repeat for each breast
  3. Slice the flattened chicken breasts into small strips or squares
  4. Season with a bit of salt, pepper and whatever spices you might like to try
  5. Put a bit of flour in a bowl
  6. Put a fistful of chicken pieces into the bowl and swirl until the chicken is covered by a thin layer of flour
  7. Repeat until done with all the pieces
  8. Warm up some olive oil in a pan
  9. When ready put the chicken pieces into the pan and cook both sides until they are nice and golden
  10. When you feel like the meat is cooked add a generuous splash of lemon juice to the pan and stir quickly
  11. Remove from heat and serve.

Tips:

  • Resist the temptation of seasinong too much or you will cover the flavour of the lemon and chicken
  • Cut a piece of chicken in two while cooking it if unsure it is done to perfection
  • Put in a bowl with some kithcen towel after cooking to dry the chicken up a bit and remove excess oil
  • Prepare the lemon juice ahead of time to make things easier

Recommendations:

  • You can use lemon juice instead of lemons to make the process easier
  • I usually do this in a wok
  • You eat them cold in a wrap, or sandwich.
  • They work well in a spinach or iceberg salad with a touch of mayohu

Possible Substitutions:

  • Turkey works great too instead of chicken
  • Can also use butter, margarine or coconut butter
  • Lime works well instead of lemon
