Penne with Salmon and Cream

Penne al salmone is one of my favourite dishes and it seems to be always successful with guests. It sounds impressive, but it is super easy to do. I will show you how in this recipe

Prep time: ~25mins | Serves: 4

Ingredients:

  • 500g of Penne
  • 500ml Single Cream
  • ~250g Smoked Salmon
  • half an Onion
  • half a glass of White Wine
  • a pinch of Salt
  • a touch of ground Pepper
  • a pinch of fresh Parsley
  • some Olive Oil

Preparation:

  1. Put the water to boil
  2. Put a frying pan with some Olive Oil over medium heat
  3. Chopp the onion finely
  4. Add the chopped onion to the fying pan, stir
  5. Cut the salmon into small pieces to preference
  6. When the onion is nice and golden add the salmon, stir
  7. Once the salmon is nice and pink, increase the flame to max and pour in the wine, stir
  8. Wait for the wine to evaporate and reduce the flame back to minimum
  9. Add the cream with a pinch of salt and pepper, stir
  10. Bring close to boil then reduce heat to minimum
  11. By this time the water should have boiled and you should have started cooking the penne
  12. Once the penne are cooked to perfection, add to the plate, add the sauce, and garnish with some parsley

Tips:

  • If in doubt about how to cook pasta check the guide
  • Don’t overcook the cream, just enough so it is, well, creamy
  • After you are done cooking remove the sauce from the hob, it’ll keep better
  • Usually it’s a nono on fish, but in this case I find that a pinch of parmesan suits this dish very well
  • Don’t use a good white wine for this, just a cheapo, bad one leftover form a night out will do

Recommendations:

  • I usually go for Barilla, DeCecco or Voiello Pasta
  • Smooth Penne work best imo, but in this case any penne will do

Possible Substitutions:

  • Soy Cream is a valid and tested alternative that works surprisingly well
  • Fresh salmon can be used too, although I generally just prefere it as a steak
  • Dried parsley works almost as well
  • It is possible to use a couple of garlic cloves instead of the onion
